Must-try Summer recipes you can make at your apartment in Plymouth

When you live at our apartments in Plymouth, the summer months are some of the best months to be a resident for so many reasons. Not only do you have access to an outdoor, resort-style swimming pool and sundeck, but there is also an on-site dog park and outdoor playground. And although the kitchens in each unit are fit for a chef, you’ll definitely want to take advantage of our outdoor pavilion with grilling stations. These gorgeous and functional areas are the perfect place to round up your friends and family and cook a delicious summer meal on the grill. Here are 5 delicious recipes that are a must-try this season at Quinn at Plymouth.

 

Summer Garden Fish Tacos

Serves: 4

Time: Prep: 20 minutes, Grill: 20 minutes, Total: 40 minutes

Ingredients

  • 1 medium ear sweet corn
  • 1 poblano pepper
  • 4 tilapia fillets
  • 1 yellow summer squash
  • 1 medium heirloom tomato
  • ⅓ cup chopped red onion
  • 8 taco shells
  • Cilantro, salt, lime juice

Overview: Lightly oil your grill rack and grill the corn and pepper until tender. Then, grill fish and squash until fish starts to flake. Cut corn from the cob and place in a bowl before adding chopped pepper and squash. Stir in the tomato, onion, cilantro, and lime juice. Lemon Garlic Herb Grilled Salmon

Serves: 4

Time: Prep: 10 minutes, Marinating: 30 minutes, Grill: 10 minutes, Total: 50 minutes

Ingredients

  • 4 skinless salmon fillets
  • Lemon juice
  • Olive oil
  • Dijon mustard
  • Honey
  • Rosemary, thyme, parsley
  • Garlic
  • Salt and pepper

Overview: Place salmon in an 11×17 dish. In a small bowl, mix lemon juice, olive oil, parsley, rosemary, thyme, garlic, lemon zest, dijon mustard, honey, 1 tsp salt, and 1/2 tsp pepper. Pour mixture over the salmon and let marinate. Brush grill grates with oil and sprinkle the salmon with herbs. Remove from marinade and place on the grill. Cook 3-5 minutes on each side. Steak Kebabs

Serves: 5

Time: Prep: 25 minutes, Marinating: 3 hours, Grill: 10 minutes, Total: 3 hours and 35 minutes

Ingredients

  • 1 ¾ lb. sirloin steak
  • 8 oz. button mushrooms
  • 3 bell peppers
  • 1 red onion
  • Olive oil
  • Soy sauce
  • Honey
  • Dijon
  • Garlic
  • Red wine vinegar
  • Lemon juice
  • Salt and pepper

Overview: Mix together all marinade ingredients (details in full recipe link below). Place kebabs in a resealable bag and pour in the marinade, refrigerate and marinate for 3-6 hours. Dice veggies into chunks and lightly coat in olive oil.  Assemble kebabs with meat and veggies in the desired order. Cherry Tomato Pasta

Serves: 3 to 4

Time: Prep: 10 minutes, Grill: 10 minutes, Total: 20 minutes

Ingredients

  • 8 ounces short pasta of your choosing (shells, penne, rigatoni, etc.)
  • 2 pints whole cherry tomatoes
  • Olive oil
  • Balsalmic vinegar
  • Garlic
  • Parmesan cheese
  • Salt and pepper

Overview: Make the pasta, cook to al dente, and set aside. Heat olive oil in a pan and add the tomatoes, cooking until blistered. Turn off heat and add balsalmic vinegar, salt, and pepper. Add pasta to the pan with minced garlic, and deglaze the pan with a bit of pasta water. Combine with blistered tomatoes, and Parmesan cheese, and top with basil. Teriyaki Grilled Shrimp and Pineapple

Serves: 4

Time: Prep: 10 minutes, Marinating: 30 minutes, Grill: 10 minutes, Total: 50 minutes

Ingredients

  • 1 lb peeled and deveined shrimp
  • 1 pineapple, sliced into pieces
  • Soy sauce
  • Pineapple juice
  • Brown sugar
  • Garlic
  • Ginger
  • Sriracha

Overview: Simmer the sauce ingredients together (details in the recipe link below) until the sugar has melted and set aside. Marinate the shrimp in the marinade for 30 minutes, then skewer with pieces of pineapple. Grill until cooked or slightly charred, about 2-4 minutes per side. View the full recipe here.
